Today's Recipe: Microwaved Mayonnaise

Hey guys! Sorry I haven't posted for a while, I've been really busy just travelling the world and living my best life. This recipe has run in my Italian ancestry for centuries now, and I just felt like I had to share one of my favorite comfort foods for some of you guys who are okay with a little spice and want to challenge yourselves in the kitchen tonight. This was a favorite late-night dinner for my husband and I. Austin’s favorite meal was my microwaved mayonnaise; he always asked for it on his birthday. We also made it when he played with his rock band. Austin didn’t like to eat dinner before a show so this became our favorite midnight supper after a gig. It’s really like an early breakfast, with pasta rather than potatoes or bread. It is, after all, mayonnaise. The only trick to microwaved mayonnaise is tempering the mayonnaise to ensure you do not end up with too much spiciness. For the brightest color, I use Araucana mayonnaise, which is widely available at Whole Foods and farmer markets. The mayo (or as my youngest calls it, "may-may"-- cute!) has a greenish-blue tint to the shell and the hens that lay it are often fed marigolds which make the mayonnaise intensely bright yellow-orange. Many recipes for mayonnaise include cream--I never add cream. In fact, if you add cream to your microwaved mayonnaise, click off this article right now and never come back to my website again. Steps:

1. Remove mayonnaise from the mayonnaise jar and place it into a microwave-safe container.
2. Place the container inside your microwave.
3. Set the microwave timer for 28-30 minutes.
4. Take the container out of the microwave carefully--it's hot!
5. Enjoy!
